Dominican Republic “Conacado” – Fair Trade & Organic Lot 2404
This is a different lot of cocoa than we had last year. I was presented with the opportunity to get them both so I took it. It makes for a great opportunity to see the subtle difference fermentation can make by trying these side by side.
Even though I feel I am repeating myself, here is a bit about this bean. It is from the Conacado co-op in the Dominican Republic. They are Fair Trade Certified, Organically certified, Rain Forrest Alliance Certified and are a general hybrid Trinatario.
Now, to compare it to the 2033 lot. It has the same luscious, earthy tone. It does have a touch of astringency, but is balanced by a cleaner chocolate flavor. Whereas the 2033 has a bit of variation in bean size the preparation here is a bit tighter with less flats and broken. I can’t really say I like one better than the other. There are very similar, but clearly different in my opinion.
