Dominican Republic “Hispanola” – Organic

Well, this is a first for Chocolate Alchemy in that we are currently offering to different Trinatario beans from the Dominican Republic. As I am finding is common for this region, this is also a luscious, earthy toned bean with a lot of complexity. I find there is a touch less astringency than the Conacado. While I am doing comparisions, it’s preparation is also more consistent than the Conacado, and again has many flavors that make me think of past years of Carenero Superior (which we is again not have due to persistant mold issues) with a “rummy” sort of flavor. When roasting it, I get hints of green tea plus a nice full cocoa aroma. This is the first bean in a while I have enjoyed eating roasted, “as is”. There are a number of flavor variations in the beans, but all seem to be really nice, and lend the final chocolate the aforementioned complexity.
