We have one of those rare days were I get to offer an origin I've never before had. By association I hope to offer you the same joy I got in tasting something new. We only have a small amount so get it while you can. There is only about 100 lb.
The aroma starts off with dried apricots dusted with cinnamon. Out of the gate the taste is bright and lively but not overly acidic. Right on the heels of that is a solid chocolate backbone and slight bitterness from that aforementioned cinnamon. The astringency present slowly creeps in at the end and is well integrated. It rather makes me think of a nice bracing cup of English Breakfast tea. There is a nice and simple sweetness that is clear and clean. Guava and mango round out the juicy profile. Finally there is a low toned dustiness of warn leather.
All in all I'm happy to have welcomed this new origin in, even if it is for just a short stay.

Once again we have taken the last of stock of a bean to bar maker that has tossed in the apron. What that means is that I have little in the way of deep and insightful origin data other than they are from Chaisutti Farm. What I have is person to person trust that the beans were ethically sourced.
Roasting
Drum Roasting
The drum roasting profile I used for the evaluation sample was 14:20/17:20/23:00 @ 258 F. Most this is a nice easy bean to roast. It takes a strong hand and does not require you to treat it delicate. I would not take it into the 260 range for fear of going a bit bitter and shifting the balance.
Behmor Roaster
Roast 2 lb and use P1 on the one pound setting, for 19-20 minutes or until you hear a pop or two. Then take it longer. 2-3 minutes. It is virtually impossible to over roast in the Behmor with 2 lb in there. If you are using the current model with Manual control, turning down the power to P4 (75% power) when it starts to become aromatic (or smells sharp) is a nice way to keep the EOR tempering in check.
Oven Roasting
Pre-heat your oven to 325 F. Put 1-2 lb of beans onto a tray single layer deep. Check the temperature every 5 minutes, stirring at that time. When the beans are in the 205-215 range, reduce the oven temperature to about 10-15 F above your target EOR, so if you are going for 260 F, set it to 275 F. When the beans reach your desired temperature and/or are smelling sharp, another 15-30 minutes, remove them and let them cool. This should give you a nice fully developed roasted bean that is in little danger of being over roasted.
